This month we are invited into the kitchen of another of Mallorca’s top chefs, Argentinean-born Eduardo G Cribiloni, who studied in Hamburg (Germany) and is now in his seventh year as head chef at Restaurante Port Alt in Portals Nous. He reveals how to prepare one of the restaurant’s more exotic dishes, Kangaroo Saltimbocca.
